Egusi, also known as Citrullus lanatus, is a type of wild melon that looks similar to a watermelon. Although its flesh is not edible, the seeds are considered a valuable source of food in Africa. Egusi soup is a popular dish in West Africa, made with traditional ingredients and spices that give it a wonderfully complex flavour. The soup is very thick and can be eaten on its own or with rice and other dishes. Some people refer to it as Egusi Stew due to its consistency.
